There aren't many days of the year dedicated to the special lady in your household. Her birthday is the day we celebrate that she was born, but Mother's Day is the day we celebrate what she means to your family.

Mums are pretty darn awesome all year round but we don't always remember to show her how much we appreciate her awesomeness. Mother's Day is the day for that. Mums like small shiny presents in little boxes, but they also love home made gifts that feel like they were made with love… mums are good like that.

Something else mum loves is a meal that she didn't have to prepare.

Not all kids are super handy in the kitchen, but no matter the level of kid culinary expertise in your home this is easy for anyone to whip up for mum while she takes it easy on Sunday morning.

If you fancy doubling the mix it will last a couple of days in the fridge and kids love this too!

Cacao Berry Bircher Muesli with a Pineapple, Lemon and Mint Frappé

Cacao Berry Bircher Muesli


2/3 cup rolled oats

1 apple, grated


2 tablespoons natural yoghurt

1 cup coconut water

½ cup of milk of your choice

2 tablespoons cacao

To serve:


½ cup vanilla yoghurt

Toasted hazelnuts

2 tablespoons PureHarvest Coco2 cacao spread, warmed for 30 seconds in the microwave


Place oats, coconut water, milk, natural yoghurt, cacao and grated apple into a Tupperware container and stir well to combine. Pop the lid on and leave overnight.

To serve, place half of the mixture into a bowl, top each bowl with ½ of the vanilla yoghurt then sprinkle with berries and hazelnuts.

Drizzle a spoon of the warmed cacao spread over the top and serve.

Time: 10 minutes, plus overnight soaking

Pineapple, Lemon and Mint Frappé



2 cups pineapple, skin and core removed

¼ cup lemon juice (approx. 1 lemon)

1/3 cup mint leaves

2 cups of ice


Place all ingredients in blender or Nutribullet and blend well.

Pour into two glasses and garnish with mint leaves.
