Hhmm.... Antipasto platter: cheese cubes, ham & salami, hummus, pitta bread etc. another fave of mine is the nacho dip (perfect cold):
Make in a lasagna dish or deep platter:
Mix up a can of refried beans with half a sachet of ol' del paso taco or burrito seasoning and spread on bottom of dish, then spread a whole jar of mild (if for kids as well) or med salsa (if for adults) on top, then mix a tub of Philadelphia cream cheese while the other half sachet of taco seasoning and layer on top (easiest way is to use two spoons).
Top with grated tasty cheese (raw) and chopped circles of spring onions and diced cherry tomatoes (you could possibly take a punnet with you fresh and chop these at last minute to put on top. As is though you can cover in cling film and refrigerate overnight and it will still be nice to eat the next day.
Serve with corn chips!
