Freezable treats & baking
For Christmas

We are having a rag tag motley Christmas this year, with catch ups with various groups of people over the Christmas period.

I would like to bake and make some sweet treats en masse that can be frozen and defrosted and offered to guests as needed.  I also have playgroup Christmas party to partly cater for as well.

I was planning:
Cupcakes - I want to bake a few dozen, then defrost and ice & decorate (I gave already started making fondant decorations for these)
Rumballs
Apricot balls

Gingerbread men (can these be frozen already baked?)

What else can you suggest pretty please?

Cookie dough that you can slice up and bake?

I bet traditional fruit cake would freeze well, or you could just drown douse it slightly in alcohol (for its preservative qualities, of course).

I will add cookie dough to the mix.

Normally I do bake and decorate a Christmas cake but wanted a break from that this year.  Yes and drowning in brandy is a must!

White Christmas freezes really well.

I'm not sure about cooked gingerbread men but you could freeze the raw dough and then defrost and bake fresh (if you have time)

Raw cookie dough can be frozen in log shapes and then cut into rounds and baked fresh as needed.

Christmas cake also freezes well either whole or cut into pieces.

That's all I can think of for now.

Plum pudding- some plum puddings can be kept for ages, so it might not even need freezing
Fruit mince pies
Chocolate truffles

I have frozen gingerbread men with royal icing and they came out perfect

I actually freeze the cookie dough ready to bake in containers. So rolled into small balls and pushed down with a fork. I put baking paper inbetween layers of cookies. Then I just pull out a container and pop them all on the tray and bake just a bit longer than normal as they were frozen.

If you want a savoury suggestion you could make mini hotdogs..
Get a packet of bake at home rolls and some little frankies, cut the bake at home rolls like you would hotdog rolls down the centre and place a little frankie in it... You can then freeze them ready to bake or you can sprinkle cheese on them and put a little tomato sauce on top and bake them then freeze them original.gif they are super tasty and my kids love them!

Peppermint bark and rocky road will store in the fridge for weeks.

Have raspberry sauce and cream on hand to top pavlova nests for a quick eton mess.

These raspberry and white chocolate muffins are easy and delish.
Shortbread
Mince pies
Slices like lemon slice, hedgehog, raspberry and coconut.  (Just not jelly!)
Peanut butter bars (not recommended if there is a possiblity of nut allergies wink.gif )
Caramel popcorn


Actually, I find any baked goods freeze well.
