I was just about to suggest the 'chook on a can'.
Easy way to cook a whole chicken - basically you just sit a whole chicken on a beer can and sit it in the BBQ and close the lid.
If you leave some beer in the can (or replace it with water/stock/wine/whatever) then it steams up while cooking and keeps the chicken moist and adds flavour.
Just rub the outside of the chicken in some oil or butter and some spices (even just some garlic and herb salt is good)

(but if you use a standard size can, you don't need to cut the top off it)
Otherwise I like to fry up chicken pieces (usually sliced breast, but thigh would work) in ginger, garlic, salt and pepper... and a squeeze of lemon just before you eat.
