My grandma is coming here Boxing Day for lunch and I want to make a super yummy lunch for her as she has been recently diagnosed with Alzheimer's and moved into a nursing home and has had a rough trot of it lately.
The poor thing has also had the last of her teeth removed on the top last week and next week will be having her bottom ones out (way overdue so I am glad about this!)
Anyhow given she will have no teeth, it limits my lunch options.
She absolutely loves prawns and I want to somehow include them in lunch.
Obviously it would be best if they were minced/chopped very finely, but she doesn't like Asian food all that much, plus prawn cakes can end up a bit rubbery.
I was thinking along the lines of making some vol au vents or something like that.
Maybe making a mornay type sauce, with finely chopped sautéed onion and garlic, plus a bit of white wine which I would then reduce, then thickened with a bit of cream and cheese. While still hot I could mix in some raw finely chopped prawns and some parsley or chives and then spoon into the cases and then cook until the prawns are cooked.
What do you think of that idea?
Any other ideas that would work, where the prawns could be chopped finely enough to make eating them easy for her?
Oh and while I am asking, any other menu suggestions? Maybe a nice soup for entree and a soft cake, pudding or even cheesecake for dessert?
