I am making this tomorrow:

Made mine this morning and its in the fridge, so I hope its ok to do so! Not really anything in there that can go off in a day in the fridge then it will be cooked for a long time anyway.

It'll be fine, I do this when I roast a chicken, every few weeks in winter (I do a roast every Sunday in winter). I chop all veg and do stuffing Sat night when kids in bed then on Sunday night just throw it all in the oven.
