I'm gonna sound really dumb but I have never done anything or been in a situation like this before but I am having a 30th birthday lunch at a restaurant buffet style and looking at inviting 20 guests. How do I work out how to pay? Do I ask everyone to chip in their share or just pay the whole amount at the end? Can you tell I have no idea?? Help!

Buffets are usually fixed price and pay in advance.  Ask the restaurant what is the easiest way.  They may prefer you to collect from everyone or they may be happy for each to pay as they come in.

Than everyone buys their own drinks.

You will need to ask the restaurant how much they charge per head for a buffet lunch before you invite your guests. You then decide if you want your guests to pay or whether you will foot the bill or contribute. If you want the guests to pay their share then it's important that you include this on the invitation. Usually you can pay/ collect the money at the end of the night but keep a list so you know who's paid or not. Some restaurants might ask for a deposit upfront. Also, check if there's a charge for corkage or if it's BYO etc. Decide who pays for drinks. If everyone knows what to expect before they come to lunch then there shouldn't be any hassles later.

If you are planning that everyone pays for themselves and it's an buffet fixed price menu, then I would suggest that when you send out the invitation, you also ask for payment with their RSVP (if they are coming).  That way you get the money upfront and will have firm numbers  to give to the restaurant.  You can pay for the meal as soon as you walk through the door on the night, easy peasy.  That doesn't cover drinks ....
