Cold soups like gazpacho or a cucumber, avocado yoghurt soup
Salads - I like them with a bit of fruit in them (watermelon, feta & mint; with mango pieces or grilled peaches), some cheese (feta, haloumi). Sunflower seats or pinenuts sprinkled on top are also nice.. BBQ fish, prawns, meat to go with the salads
I use chicken thighs cut into two or three instead of Marylands and garlic and ginger from a jar (the horror!). Last time I added a diced carrot for a bit more veggie goodness and served it with broccoli steamed in the microwave.
