This is pot-lickingly good. I didn't use all the oil, maybe only 1/3 of a cup in total, and I used two quite spicy chillies, so I didn't feed this to the kids, but man I enjoyed it with a slab of hot, buttered rye toast.
Lentils and eggplants with pomegranate molasses.
I cooked it in a 150 degree oven for 1.5 hours.
