Why haven't I been told about Brownies?!

So today I made my first ever batch of Brownies.

O... M... G... so so good!!

Why has no one ever told me about these before?  I mean I know they existed... but why has no one let me in on the secret of how heavenly they are???  Were you all keeping this information quiet for a reason?!

I made them with the intention of cutting and freezing into portions but DH and I had a house meeting and decided maybe we'll just have them for dinner instead of curried sausages roll2.gif

They are pretty darn good aren't they - I'm not that much into chocolate cake, even mud cake, but there's something special about brownies. Hey, curried sausages are much nicer the day after they are made anyway tongue.gif

One of my all time favourite foods. Can't believe you never knew how good they are!

I take them to people's houses for parties and BBQs and end up giving everyone the recipe biggrin.gif

I have a brownie maker! Sooo easy.

Quite a few aussies I know aren't into brownies, they say it's an 'american thing'. Meh, anything chocolate works for me!

I discovered the Donna Hay packet mix chocolate chunk. EVIL!!

No they don't last to storage.

You obviously don't have enough fat friends (well fat friends who bake I guess).

We ALL know about brownies!

Love it.

We are a Brownie house hold, salted fudge chocolate are my favourite, kids like sprinkles, raspberries or white choc chips also rate highly. DS2 had a Brownie stack for his birthday cake, all piled up like a pyramid with lego men climbing the stack. huge hit, no icing, no knife.

We are a brownie household (but then again, I *am* American wink.gif ). IMHO, they are vastly superior to cake because of the richness. I load mine with chunks of Cadbury milk chocolate bars. Orgasmically good!

I am a huge brownie fan. Chocolate gooey goodness. YUM!! But I don't make them often because we all eat them way too fast. My Mum bought me a brownie maker for Christmas. She gave it to me as a little joke but it is actually quite good. Think she said she got it from Woolworths.

Namie's Chocolate Brownies

6oz butter
1/2 cup cocoa
2 cups brown sugar
2 tsps vanilla essence   (or 1 tsp of real vanilla)
1 cup plain flour   (or ½ cup flour and ½ cup of almond or hazelnut meal for gooey-er Brownies!)
2 eggs
approx 100g of your favourite chocolate

In a large saucepan melt butter (don't boil) and add cocoa and stir.
Add brown sugar and vanilla essence and stir until sugar is dissolved.
Remove pan from the heat and stir in flour then swiftly stir in the eggs, 1 at a time.
Add the chocolate in small chunks and stir till melted through.
Pour into slice tin and cook at 180deg for 20 - 25 minutes.
Lick pan and spoon clean. Try not to share if you can help it.


I tend to use a mix of Lindt 50% and 75% dark chocolate, or Nestle dark and milk choc chips.

Hazelnuts or walnuts are also a nice addition at the end, although I prefer not to have them as I love a gooey brownie without crunch!

For a deluxe dinner party dessert (or just dessert for us!) I use a Dutch cocoa (Jones the Grocer sell one, but I found a Nestle one at the supermarket recently) which makes for a super rich brownie, and serve warm slices (larger than normal) with a thick or clotted cream and a dusting of icing sugar.

I have a colleague that makes salted caramel ones with the caramel oozing out with gooey yuminess

Must drop subtle hints to her when I go to work tomorrow

My favourite ones don't rise at all, they turn to a hard chewy mess at the bottom of the pan. I can eat a batch all in one go... so I don't make them any more!

This recipe is the one I use.  Ooey gooey goodness. Don't be tempted to use cooking chocolate though - Old Gold original is the best.

Yes I always thought they were just an American version of a choc slice/slab cake.  How wrong I could be!

I remember eating a store bought one years ago and it was rock hard and crap so I just figured they were rock hard choc slices.  It wasn't till I was reading the other day that I discovered they shouldn't be a rock!

SeaPrincess's recipe above doesn't use cocoa... but you'd need a block of dark chocolate original.gif
