I want to make some 'under the sea' cupcakes. I've found the little characters I want to put on the cupcakes, but in the same shop I stumbled across some coloured fondant that I might like to try and use. I understand the basic concept (roll it out, cut it place it on etc), but do you put icing underneath it? If so, what? Or am I wasting my time and would be better off just using normal blue icing?

you could use a little butter cream - some people don't like eating fondant so they could peel that layer off and have a buttercream cupcake ...
i think traditionally marzipan was put under fondant (not my cup of tea) - u can also use apricot jam or similar ...

You can also put ganache under fondant and tastes yum or just use ganache. It's a ratio of 2:1 chocolate to thickened cream, I normally bring the cream to boiling and then stir through grated (or whizzed up in food processor) chocolate.

If you used white choc, you can colour it blue and it will prob turn out a bit greeny anyway. ganache can also be peaked like waves.
