Buttercream icing

Hi everyone,

It's currently Friday, party is on Sunday morning. I've made the cake and it's in an airtight container in the cupboard. I'm going to slice it in half horizontally and spread frosting in the middle, then sandwich together and do frosting all over the outside. Then stick lollies all over.

My question is: when do I do the icing? If I do it tomorrow, I'll have to keep it in the fridge, but then will the lollies stick to the icing on Sunday morning? (I don't want to do the lollies until then because the colours will bleed into the pale yellow frosting). Or should I risk it and pray for no disasters and do it on Sunday morning before 10am? Help! Out of my depth!

What lollies are you using that you think will run? I’ve done fully iced butter cream and stuck lollies and the colour has been fine.

The colour in some lollies can react to the moisture in the icing. To be safe, I’d ice and decorate on the day of the party.

Make the icing tomorrow and then ice the cake on Sunday. Leave out once iced. No need to put in the fridge

It’s also much easier to split and ice a cake that’s cold. We always freeze ours, take out the morning of the party and cut, ice and decorate.

I normally ice the night before and leave it out overnight. Thought mine are in winter/spring when it's not particularly warm.

Agree with others, don't put it in the fridge once iced. The butter cream is best at room temperature.
