Hi, working my way through the pantry (as I’m sure many of us are) and found an unopened packet of skim milk powder (I used to use it to make yoghurt but don’t anymore).

I want to use it in cooking (cakes) and was wondering if I can just make it up ‘extra strong’ and use it in the place of full fat milk? Writing this I’ve realised that using it as skim milk probably won’t make much of a difference in the taste of a cake but still interested in people’s thoughts.

thanks

I don't think you would notice any difference at all if you just used skim milk instead of full fat milk in a cake recipe.  I wouldn't waste the milk powder doing that.

Many commercial products have skim milk powder in them so I don’t think you will notice a difference. If you make it too strong the consistency might mess with the recipe quantities but it is pretty forgiving in my experience.

Make it up and use it in place of fresh milk in a macaroni cheese or pasta bake. With all the cheese and other ingredients you would be hard pressed to tell the difference. I also use it in bread making
