(mexican?) rice salad

I am having people over for lunch next week and an having a bit of a mexican theme... And am looking for a recipe for a bean/rice recipe.

Oh, I asked about a rice and bean (or beans and rice) recipe last week and had no replies!!! I have made them before, but they just weren't as authentic as ones I had in Central America, and wanted some tips.
I would use long grain rice cooked with chicken stock instead of water. Fry up some onion, garlic, red and green capsicum, celery and use some taco seasoning. Add a small tin of corn kernels, and some chopped spring onions. Then mix this in with the cooked rice. Add a tin of drained kidney beans (or other smaller sort of beans) and some fresh chopped coriander and flat leaf parsley, at the end. Serve warm with some salsa mixed through, a swirl of sour cream on top and some fresh sprigs of coriander. Or chill and serve cold, with some lemon and olive oil dressing to make it more like 'salad'.

Or you can even buy those packet rice mixes in Mexican flavour... add some beans and that's about a simple as you can get!

Thx heaps for the recipe! I am also serving a bean/torilla stack, chilly con carne, nachos etc.... Should be good fun!
Have only just discovered this part of EB and will be checking it regularly, heaps of good ideas!!!

Tortilla stack is one of my DH's fave recipes that I make!! Have fun!
