I LOVE oven-bags, and the juices at the end, caught in the bag, make the most gorgeous gravy. I couldn't stand the 'old animal fat' smell my oven always got when not using oven bags. I find my chooks always brown nicely in the ovenbags, but to get that 'crispy' finish, maybe you could bung it in a really hot oven for 5 minuts or so out of the bag? As far as cleaning goes, every 6 months or so I book in an environmentally-friendly cleaning company that specialises in no-chemical, steam cleaning for ovens. They use intense, high-pressure steam to clean the oven, and I tell you, my oven has never looked cleaner. All the little baked-on black bits go away - yay! And I just can't bring myself to spray those horrible fumey chemicals in the place where I prepare food! They CAN'T be good for you!!!
