Best Sausage Rolls for freezing?

Hi, I want to make sausage rolls for my DS 1st birthday and freeze them. What is your best recipe for this purpose?
Do you freeze before or after cooking them?

I make these once a month to freeze.
500g lamb mince
500g sausage roll mince in tube thing
3 carrots grated moisture squeezed out
1 large onion grated moisture squeezed out
dried herbs - lamb herbs rosemary etc..
1 egg fork whisked
large quirt of tomatoe sauce like a 1/4 cup or just under
Mix with hands til all combined.
Lay out puff pastry sheets I cut them in half down the middle and lay a long log of the mixture in the centre and fold pastry over tight and join the sides together and push down with fork rather then rolling them.
I cut them into 3rds. Egg or milk the top, fork some holes in for steam to release and bake for 30 mins.
Cool down and pop in freezer bags. Defrost in fridge and reheat in oven when needed. My sons and his mates love them. Ometimes we do poppy seedson top sometimes not.

I use a really simple one. It is not really cooking more assembling.
One roll of sausage mince
One packet of hamburger helper
One packet of puff pastry
Mix minced meat and hamburger helper together according to the instructions on the back on the helper pack.
Make into rolls and cook untill golden.
They freeze really well and you can add whatever you like to them to make them a bit more special.

I make a hidden veg one with (approx quantites)
500g pork mince
500g beef mince
1/2 a grated cabbage
2 grated onions
2-3 grated carrots
Tbs tomato paste
1 large egg
Mix, assemble and freeze in skinny logs. To cook I cut the fozen logs to size and bake in a hot oven.

I will try some of these.
I guess it doesn't matter if I freeze before or after cooking.
