Hi,

I am trying to increase DS (18 months) vegie intake, by offering vegies at each meal time and snack time, rather than just dinner.

So, what is your favourite way to prepare or serve vegies:

1. At breakfast?

2. At snack times?

3. At lunch?

Any recipes that are either easy to throw together, or that freeze well in individual portions?

Thanks for any help!

My DD is currently obsessed with carrot. I chop and then steam them a bit so that they're no longer crunchy, but not so long that they lose their nutrients.

She LOVES them. She also loves steamed peas and corn (from bags of frozen veggies) as snacks. They're colourful, tasty and she can pick them up herself without needing to use her fork or spoon.

For breakfast pumpkin pancakes, vegetable omlette,
try adding veggies into scrambled eggs eg. Mushroom or/and capsicum. I've seen a receipe but I've never tried it for vegetable French toast fingers, I think they dipped the bread in cauliflower purée?!
Snacks, as PP suggested carrots or cucumber sticks. I sometimes make mini pumpkin muffins and freeze them for snacks.
Lunch, zucchini and carrot slice, vegetable muffins, veggi quiche, toasted cheese, tomoto and avocado sandwich or veggie stir fry with noodles

I just tried vege fritters yesterday and they were a huge hit with my 3yo & 8mo. I got the recipe from Taste.com.au.
You can use any veges so it's great for using up the bits and pieces in the crisper.
