Carrot cake. I bought a big bag of carrots at the supermarket on Friday. I forgot about the other big bag lurking in my fridge.
I have a fantastic recipe based on cups so if you use a really big cup/mug you get 2 bar sized cakes. I might send one in for the teachers...my son's teacher and aide are truly wonderful women and deserve a treat!

Banana muffins when the kids are in bed tonight, so they're nice and fresh for lunchboxes tomorrow.
This is the recipe I use and they stay moist for at least a couple of days in a sealed container:

So far tomorrow I will be baking:

Muesli Cookies (I found some muesli in pantry that needs to be used)
Fruit and Spice Scones (Found Packet in Pantry close to expiry)
Bread- White
Bread- Fruit

I made Anzac biscuits yesterday. Making chicken meatloaf muffins today- great for kids lunches and snacks. Not baking, but also made chicken noodle soup yesterday. Not planning on anything else at this stage.

pikelets (to freeze), milo muffins, savoury scones, again to freeze (the freezing is so DS & DD can take them to school whenever with variety)
and maybe this for dessert or these - will depend on how hot it is today

It's a big day, but my freezer is empty at the moment, so I really should take this opportunity.

Silverbeet, ricotta and fetta rolls for lunches. Hopefully also some for freezer for when bub is born.

Pumpkin soup.

Blueberry muffins. For snacks and when MIL comes over today. And maybe some raspberry and white chocolate ones.

Oh and DH is making homemade pizza for lunch.
