I have to make dessert for 25 people on Thursday and think I've decided on this lemon cake
http://www.bestrecipes.com.au/recipe/Moist...rowd-L5907.html I don't think it'll be enough so will do double quantity and cook in a rectangular baking dish... cake experts do you agree? In regards to the icing sugar dusting, I'll have to do it several hours ahead as it's for a surprise party and I have to drop it at the restaurant, will the icing end up just melting in? Should I do a light icing instead of the dusting? Or if anyone has any other cakes I could do for 25 people I'm happy to try a different recipe. Thanks |

The dish they've suggested is already pretty big. If you're doubling the volume I'm not sure you could fit it in a baking dish that would fit in your oven.
If you're cooking for a crowd, you could make a really rich mudcake, so people only have a small piece. |

The icing sugar will melt in if there is moisture in the air, see if you can do it as close as possible to serving, otherwise it will go all soft & run into the cake.

whoops, I mis-measured my dish, it's about 35 x 25cm which I think will be a big enough cake but the mix in the recipe probably still won't be enough to fill it...
Argh, too hard, how many people do you think the recipe would do? Had thought of chocolate cake but thought mud cake might be too rich after two courses.... |

If you make it in a 35x25 dish, that means that each person could get a piece that's 5cmx7cm - that seems pretty good to me, especially if there is icecream.
I would guess you'd need 1.5 times the original recipe, so I would probably double the recipe as you said, and then just put the extra mixture in a muffin tin or two for a little treat |

No, don't do this. Make 2 or 3 separate ones and then layer them. Often when you double the amount it won't cook correctly. For DDs christening cake I used a 29cm round spring form tin and did three separate cokes and layered them. I did them in Red Velvet, pink sponge and white sponge. It looked really cool when you cut into it! |

Thanks everyone, think I've figured it out now. I was going to do a cream cheese icing but decided to serve with double cream dollop instead |

Was just going to suggest a dollop of cream, but aside a french tea cake....so a large moist butter cake topped with melted butter and cinnamon sugar while still hot.
Off to the kitchen I think. |
