Cubed feta, cubed beetroot (add a the last inute) baby spinach and a bit of balsamic vinegar. If you are wanting more than that, roast some sweet potato cubes and add as well. And pine nuts.

What about a Greek salad?

It's a bit more interesting than the usual garden salad but minimal prep or exotic ingredients.

I'd bulk something like this up with some lettuce

I've recently tried grilled eggplant salad with tomatoes and feta cheese, and it was very good.

You can also opt for a Mediterranean salad. Throw together mixed salad greens, plum tomatoes, kalamata olives, avocado, feta cheese, chickpeas and red onion slices. Dress with vinaigrette.

Watermelon and feta salad.


100 g frozen raspberries, thawed

1 tbs vinegar, apple cider

1 tbs olive oil

1200 g watermelon, peeled, cut into 3cm pieces

75 g black olives, drained, pitted

70 g reduced-fat feta cheese, crumbled or diced

1/3 cup(s) fresh mint

1/3 cup(s) celery sticks, leaves


Instructions
To make the raspberry vinaigrette, puree raspberries and vinegar in a small food processor until smooth. Add oil and pulse until combined then season to taste with salt and pepper.


Place the chopped watermelon on a large serving platter and scatter with remaining ingredients. Drizzle with vinaigrette and serve immediately.

Beetroot and lentil salad this is a favourite in our house, recipe says to have it warm but we've eaten it cold and it's fine

Mixed rocket/spinach
Perino tomatoes (you can get these from Coles - they're like mini romas but taste even better). Cut them in half lengthways
Sliced cucumber
Greek feta (dodoni is the best one)
Creamy garlic/yoghurt style dressing
Wholemeal wrap

it's incredibly easy and soooo delicious. If you want to add some protein/spice, marinate some diced chicken in portugese-style sauce, cook, and add that. One of my favourite meals, I never get tired of it.

One of my super-simple favourites:

Baby spinach
Avocado (big chunks)
Fetta
Toasted pecans or walnuts

With a dressing of olive oil and lemon juice, slightly warmed.

Soooo delicious!
