Hi,
I have a birthday morning tea at work on Tuesday and am wanting to make something healthy. I will have access to a fridge, freezer and microwave at work. There will be 10 or so people. |

If by healthy you mean made from mainly healthy whole foods as opposed to "really low fat & sugar" this is terrific. I am not a slice person at all but found this to be easy yummy and popular (especially with my notoriously fussy daughter who is not an enormous fan of home made baked goods):

I really love it when people bring veggie sticks and dips. And fruit platters - stuff always tastes better when it is cut up and presented nicely!
Also mini frittatas or mini muffin sized zucchini slice bites are good too. |

I make Mushroom pate with rice crackers and veggie sticks for every work lunch and it is always finIshed Off.

I'm not a duck eater (and not sure if it's considered healthy) but, my Mum has makes a cheats version of peking duck. She uses tortilla wraps cut into small squares, fills with crispy shredded duck, diced cucumber, plum sauce (and maybe something else, can't quite remember) and secures with a toothpick. They look cute and people love them ... again, I can't vouch for taste as I don't eat duck
What about little wholemeal or grain dinner rolls (Bakers Delight sell a good size) and fill with shaved roast beef, horseradish cream and water cress (or some type of crunchy lettuce if you can't get water cress). Same as above with finely chopped chicken, alfalfa and whole egg mayo (all ingredients mixed together) I've made thai beef cups for a party before. They are so easy. The only fiddly bit is scooping out the cucumber flesh to make the little cups. The rest you can make ahead (I roast a small piece of lean beef but you could just buy it already cooked from a deli). People go mad for them. Here's the recipe I use Cucumber Cups With Thai Beef Salad So, my suggestion would be to forget catering anything that does involve heating.
