|
We are egg, dairy & gluten free. I am looking for a substitute for nuttelex particularly for icing cakes as I find the taste too strong. Maybe coconut butter? But that's only if I want a coconut flavour.

We use a marg from Coles and woolies in a blue tub called dairy free. No one has ever been able to taste the difference. I have to say I haven't checked it for gluten though

Have you tried Nuttelex Lite? I find it doesn't have quite as strong a flavour and might work better for icing. I think there is also a soy based margarine, Melrose I think it's called but I haven't tried that one so I don't know if it has a strong flavour or not.

You could try shortening, some cake decorating stores sell it |

I have to say I haven't checked it for gluten though +1 It is called Tablelands Dairy Free It is gluten free. I have used it in my cooking for a number of years and I have not had any problems. |

You can make a ganache with dairy free chocolate and coconut cream. If you use pure coconut cream, it will harden on setting in the fridge and you can whip it up with beaters before using. That does rely on the coconut flavour being desirable though.
Are commercial marshmallows gluten free? I'm sure I've seen recipes that call for melting them and adding something to make a marshmallow icing. I do find when I use nuttelex in icing that you need to add quite a lot of essence or some other flavouring. I have found adding a very ripe banana to the icing is pretty good. |

Most commercial marshmallows are not gluten free (eg pascall and the like). I have found plain gluten free marshmallows at chemists (sugar free lolly section).

They are also halal, and thus often sold in other shops where halal products are sold or in shops in areas with alot of Muslims (if you live in or near such an area you may very easily find them) - sorry can't remember the name, but they are in a pink coloured bag.
