I tried sending a PM reply for this recipe but it wouldn't work so I thought I'd add it here.
Quinoa and mushroom tart 1 cup quinoa cooked in 2 cups veg stock for 15 mins. Allow to cool slightly (and absorb liquid) add 2 eggs and 75g parmasen. Shape into base if a pie/quiche dish and bake for 20mins. Sauté 250g mushrooms with onion, garlic and thyme. Mix 200g cottage cheese, 2tbs natural yoghurt and some lemon rind. Spread cottage cheese mix over base, top with mushrooms an bake for another 30mins. It crumbed a bit when I cut it warm from the oven, but was still delicious, just messy. The 2nd one was taken to work and had set perfectly and was just as good reheated for lunch. The recipe quantities were for one tart, but I made 2 in my quiche dishes (normal size) Give this one a try, it is really good and high in protein so it keeps you full longer.
