I have just bought a huge box of mangoes that were going cheap as they're nearing their demise. I've pureed them and now have a great big tub of mango puree... and need some ideas what to do with it
I plan to freeze it in smaller lots to use for smoothies, but would like some ideas/recipes for what I can do with some of it before I freeze it all. Thanks! |

Thai mango chicken.
The local thai shop makes a basic stirfry with a mango sauce made out of pureed mangoes and a few slices. It's divine and it would probably use at least a cup of puree. I'd also make iceblocks out of them. Weiss bars are a favourite of mine and they're just mango puree with sugar. |

Or, if you want to share... Mango sorbet or icecream is delicious. Just google for plenty of recipes. It's also lovely over vanilla icecream, or a macadamia icecream is wonderful with mango. Mix with mint, lime and soda water for a refreshing drink. Add vodka if you like. I'm not sure how it would work with puree (it should be fine), but I've often made a salsa with finely chopped mango, mint, cucumber, lemon, macadamia, chilli, and coriander. This is lovely with grilled fish or chicken. How about mango chutney? Again, it's usually got chopped mango, but puree should be fine. Or you could just drink it! |

Mango ice cream or sorbet... Jaime Oliver had a very easy one with mango pulp in his 30mins stuff.
Add to cakes? chutney's etc |

Stuff some pine nuts under the skin of chicken drumsticks, bake in oven.
Brown onion in saucepan, add mango puree and use as a sauce for the chicken. |
