Hi all. I've got about 4kg to go to be back at pre baby weight but im finding it difficult to shift so was just wondering what you all eat each day?

As I'm veggo, I would love to hear from other vegetarians on what you eat each day to lose weight?

Any salad ideas for lunch would great too!

I am not a strict vegetarian, I eat meat just very rarely. I am in the middle of losing weight and have been mixing up a few different salads such as:

Quinoa, with grilled eggplant, capsicums, fresh tomatoes, basil, bocconcini, garlic, salt and pepper.

Roasted pumpkin, spinach leaves, pinenuts, avocado, onion, cucumber, fetta

Acoleslaw style recipe: cabbage, beetroot, carrot, cucumber, capsicum, with a mustard, olive oil, light sourcream dressing.

Also found roasting pieces of sweet potato and topping them with avocado, grated cheese, carrot, shredded spinach, corn, and a small amount of salsa or sour cream.

Other option is a zucchini slice or vegetable slice.

I also tend to have cottage cheese with avocado and cucumber on ryvitas as a snack.
