Hi all,

A couple of years ago I found a delicious recipe for a veggie cous cous which I think was in one of the CSIRO total well being diet cookbooks. I no longer have the books, so I was wondering if anyone had one that they could look at and let me know the recipe?

From the CSIRO diet cookbook: Hope it's the one as I didn't check the other three books for couscous recipes.

Roast Vegetable and Couscous Salad

1 cup diced pumpkin
1 red capsicum diced
1 zucchini diced
1 small eggplant diced
1 tbsp olive oil
1 cup salt reduced chicken stock
1 cup couscous
1tbsp lemon juice
3 tablespoons chopped parsely

Preheat oven to 200 degrees and line tray with baking paper

Combine vegetables in a bowl, drizzle with the oilve oil and toss to coat. Spread in a single layer on prepared tray and bake for 20 min or until tender.

Meanwhile, bring stock to boil, place couscous in a heatproof bowl and pour on the hot stock, then cover and set aside for 10 min. Fluff up the couscous with a fork and transfer to a large salad bowl.

Add the roast veg, lemon juice and parsely, toss, serve warm.

That could be it - thanks! I remember the one I did had leek but I think I just added it myself. That was how I learnt to wash the leek properly before use, a delicious dinner was ruined by eating dirt!
