This is a bit of a cooking n00b question, but I usually use heart smart beef mince from Woolies, which is $13-14/kg. What cut of beef can you use to make your own mince that will be low in fat? I keep reading about how it's more economical, but the cheaper cuts either have a fair amount of fat or gristle. Or does gristle not matter once it's all minced up?

When I have made my own mince I have just used whatever was going cheap and spent time to cut off fat, sinew and gristle (if the meat had any, or too much) before I minced it.

Yep, I usually buy the cheapest I can find. The last 2 weeks our Coles has had silverside minute steaks for $8/kg. Hardly any fat on it so just cut and mince.
