Hi there, looking for some tips for my son's birthday cake. I have always made his cake the day before I needed it and just stored it in the fridge overnight.

This year, his birthday is this Sunday, due to having a busy Saturday I will be making his cake Friday. (so 2 days in advance) It will be a butter cake covered in butter cream (2-3 different colours), it will have some lollies and small amount of fondant which is decoration, which I can do on the day, but I definitely need the cake and buttercream done.

Should I still just store it in the fridge (cover or uncover?), but this would be for 2 days, or should I freeze it and take it out on the morning.

Not sure the best way to go, and would appreciate any advice, thanks original.gif

Cake goes stale faster in the fridge so unless the icing needs to be refrigerated it is better off covered and stored in a cool dark place. Butter cream doesn't need to be refrigerated unless it is so hot it will melt.
