Anyone have any good recipes for chicken breast that isn't a stir fry or schnitzel? Very uninspired with what to make.

|
Tuscan chicken is a favourite in our house with everyone.
Dice chicken and coat with Tuscan seasoning. Cook in fry pan. Add 300ml cream and a bit of stock. Simmer and reduce. Serve with vegetable of your choice. |

I got a really yummy recipe off this site the other day, and it's sooooo easy:
cut up chicken breast/s into bite-sized pieces fry up with some onion and garlic until cooked add one tin of condensed mushroom soup Done! I served it with mash and steamed veggies. |

This is from Donna Hays No Time To Cook and it has become a favourite.
Cut the breasts in halfs (longways, basically you are trying to reduce the cooking time on them so they arent so thick). Place on each chicken piece a slice of mozarella, a basil leaf and wrap in panchetta i do the above earlier in the day as my kids are little and a PITA at 530pm! Put pitted kalamata olives and halved cherry tomatoes in a roasting tin with a bit of olive oil. Roast for 10mins Then put the chicken breasts on top of the tomatoes and olives. Roast for 12-15mins. Serve with a salad. Delish |

This. This is genius. Looks like way more effort than it actually is and is really tasty! I have passed it on to numerous friends and family and no one has complained about it yet. If you want to get really "gourmet" wrap the chicken breast in prosciutto instead of bacon!

Oh, you can do just about ANYTHING with chicken breast! Do you have whole, or diced/sliced?
Whole: - Cut horizontally, taking care not to cut in half. Layer with spinach, feta and sun-dried tomato, or bacon, dried apricots and cream cheese, fold flap over to encase filling. Tie with string if you wish to help it hold together better. Cook for approx 30 minutes at 180, or until juice runs clear. Slice across the breast and serve. - Season and spray with oil, sear each side for about 2 minutes in a fry-pan. Place into a shallow dish, cover with a mixture of white wine and water (you can use just water but the wine gives much nicer flavour). Cover the dish with a lid or tinfoil - ensure it is tightly covered if using tinfoil - and bake in oven for approx 30 minutes. Poaching like this makes it deliciously tender - even if it is overcooked it tends to just fall apart. - Par-boil potato, sweet potato, pumpkin, parsnip and capsicum or whatever veges you like and that can be baked. Cut into roughly 4cm chunks, coat with oil and spread in a roasting dish. Cut up chicken breasts into similar sized pieces and layer on top of veges. Mix 1/3rd of cup of liquid honey and wholegrain mustard together and pour over the chicken. Bake until veges are tender and chicken cooked through. Sliced or diced: - dip in egg then seasoned flour (I use half and half cornflour and standard flour, with approx 2-3tspn of seasoning/1C flour). Deep fry for very yummy, crunchy, but bad-for-you chicken, or bake on a tray lined with baking paper for about 20mins at 200deg. Turn during cooking and take care not to overcook if baking as it dries out. - mix cooked sliced mushrooms, 1Tbsp wholegrain mustard and 2Tbsp balsamic vinegar and 2C cream, bring to boil and simmer until cream reduced and thickened. Add crumbled feta and cooked sliced chicken, season and simmer 2 minutes. Mix through cooked pasta and 100g spinach leaves - heat through and serve with crusty bread. Hope this helps - we had chicken last night so I'm stuck for tea tonight - any ideas? |

2 ideas from taste.com that we use on a semi regular basis:
Chicken with crunchy cos salad Slice breast in half and bash a bit to make it thinner. Marinate in some olive oil, dried chilli flakes, garlic and mint. Slice cos finely and toss with some line nuts, bean sprouts and sliced shallots. Dress with white wine vinegar just before serving. Pan fry the chicken and until cooked and golden. It's a simple recipe yet surprisingly tasty. Oh, season the chicken before cooking. Chicken parcels with chickpeas Make a little parcel with baking paper within alfoil. Place a chicken breast in the centre, sprinkle around some tinned chick peas, sliced fennel, splash of white wine vinegar and glug of olive oil. Season with salt and pepper, wrap up and bake for about 20 mins. The steaming effect means the breast doesn't dry out. |

In the past week-and-a-bit, we've had:
- Grilled chicken breast with asparagus and pasta in a light Pesto-Alfredo sauce. SUPER good. - Tuscan style chicken, white bean, and kale soup. Yummers! - Herb-roasted chicken with stuffed squash and corn. The chicken was great but the squash was AMAZING lol Tomorrow, probably honey mustard grilled chicken salad with goat's cheese and walnuts. Just mix it up with other meats and it won't get too dull |
