Should be cleaning!
Hi all, need some ideas my mum has gone off tomatoes and other foods that are acidity, so wanted to make her a nice salad for Christmas

Eta it can't have nuts or fish either as my brother allergic to both.

My family love this salad:

1 tin lentils
1 tin chopped beetroot
few handfuls spinach leaves
1 Chopped Red Pepper
about 100g chopped feta

Even my fussy kids love it!

Watermelon & Feta salad. You can google the recipe as there are differing ingredients but its basically watermelon, feta, mint and balsamic vinegar.

Very easy and very festive looking.

A Waldorf type salad. Get a couple of apples (red or green), celery, plain or vanilla yoghurt, cinnamon. I also add walnuts but you don't need to. Cut up apples and celery. Add enough yoghurt for a generous coating and cinnamon to taste. Stir and add nuts if desired. Easy and healthy.

Rocket, orange & fennel salad.
Feta is optional original.gif

Grate fennel over the rocket. Orange pieces on top of that, squeeze a bit of orange to get the juice flowing and add feta is you like.

I'm making a yummy sweet potato and green bean salad next week!

The dressing is balsamic vinegar and sweet chilli with garlic. It can be served hot or cold!

Here it is here...

I think I might put some haloumi in it too because I'm addicted to the stuff!

Is it ok to have nuts on the side to be added by nut eaters? If so do so, if not just omit them:


Grated carrot, grated beetroot (both raw), toasted pistachios on the side.

Green lentils, rocket, feta, walnuts on the side.

Rocket, pear, blue cheese (or parmesan, or whatever tickles your fancy). Walnuts are good in this one too.

Coleslaw.

Steamed cauliflower chopped very small, diced capsicum, black and green olives, parsley, red onion.

Roasted mixed veggies and couscous.

Potato salad.

Vermicelli noodles; julienned carrot, red capsicum and cucumber; coriander; mint; spring onion; peanuts on the side.

Grilled haloumi, grilled capsicum, grilled zucchini, grilled eggplant, fresh herbs.


Dressings as appropriate.

Crunchy noodle salad is one of my favourites, although it does have pine nuts. You could probably leave them out though. The recipe is on the back of the chang's fried noodle packet.
