A couple of years ago I made a minestrone soup that had small pieces of beef in it.
The beef was browned in the pan first, then removed, and them the carrots, celery etc was sauted before the beef was added back in along with crushed tomatoes, beef stock and then simmered for a while before adding zucchini, green beans and pasta. Edit to add it did not have cabbage!! Edit to also add, it also had kidney or white beans too I think. Or something along those lines. I have flicked through my recipe books and can't find it, so I am assuming that I must have stumbled across it online somewhere. But my googling skills have let me down and I can't find it (or one similar) Please help EBers! Do you have a recipe or a link to a recipe like this? I don't even think you would need a recipe for that - if you're game enough to freestyle.
I'm assuming you would need a beef that can be slow cooked - like chuck. Make sure it's a little bit marbly to add to the flavour. Basically follow what you've listed in the parts you remember - brown the meat, coat the vegetables until pearly and a bit soft. Then, add tinned tomatoes, stock, tomato paste. I tend to roughly/lightly mash the soup so it's not like a stew (and too chunky). Add a bit of fine pasta like angel hair, macaroni etc. Just towards the end I usually add a bit of finely chopped flat-leaf parsley also. Season to taste with salt & pepper. Serve with shaved Parmesan (the most important part of the soup!) I'm not sure it's what you're looking for, but it could get you close. |

i've never had beef of any kind in minestrone, are you sure it wasn't a different type of soup?
