DP and my Mum have decided they want some kind of fish done on the BBQ this year Xmas day. We will have with BBQ prawns, cold prawns, oysters and some kind of salad (maybe a pumpkin and feta, but I'd love any suggestions..)
For the fish I'm thinking either Atlantic salmon portions or Snapper or something similar. I'm going to do individual pieces, not really keen on the idea of doing the whole fish. Does anyone have any delicious ways (marinades,wrapped in foil etc.) that they usually cook fish on the BBQ. I'd love some tips as I haven't really done it before. Thanks in advance. |

My dad does Salmon on the BBQ & all we do with it is wrap in baking paper that has been lightly sprayed with olive oil & then wrap that in foil.
5 minutes a side on the pre-heated webber & they are done to perfection. We are not big on added flavours to our seafood - let the fish speak for itself. |

We eat lots of fish cooked in the bbq and keep it pretty simple to let the flavour of the fish shine through. Atlantic Salmon for us is skin on and salted to make it crispy. 3ish minutes each side for thick pieces and it's ready to go.
For snapper, barramundi, parrot fish etc I just dry the fillets off with a paper towel and lightly salt then cook on a hot grill to get the little crispy bits on the fish. A drizzle of olive oil and a squeeze of lemon is all you need. If you want to add flavour, a nice salsa of finely chopped mango, red onion, cucumber, olive oil, parsley, a little sugar and salt is really lovely spooned on top of the fish.
