I was hoping I could make the potato salad for Christmas Day on Sunday, will it be ok for that long?

I'd freeze the apple pie.

I wouldn't make the potato salad any earlier than Christmas Eve personally.

You could cook the potatoes on Sunday and cut up whatever else you add to the salad. But then dress it Xmas day morning.

I would do it Christmas eve then dress it on the day, In our house, if potato salad isn't eaten by the end of the following day after it's made, it gets thrown out.

The white onion in the potato salad is the ingredient which goes off, but you can cook the potatoes beforehand and leave them in a covered container in the fridge, until the day you make it.
