> Pork roast question, Rind doesn't cover flesh

Hi ladies,

I have a pork roast and im a bit worried about the posrk drying out as the rind doesnt cover the flesh of the roast on the top, Will this affect it drying out? I dont want to cover it as i want the crackling.

I'm ok with the cooking side just worried about it drying out...it's a shoulder roast.

i was thinking should i maybe wrap the exposed part in foil and just leave the rind uncovered?

Na. Ive cooked pork like this and as long as you don't overcook the meat, it doesn't dry out.
