> Pasta salad challenge

DH suggested pasta salad for dinner tonight. The fridge is pretty bare. So far I have some pumpkin pieces roasting.

Ideas please? I have:

Cucumber
Carrot
Lettuce
Onion & garlic
Semi dried tomatoes
Pickled jalapeƱos
Capers
Gherkins
Tin corn
Frozen peas
Frozen spinach
Frozen edamame
Colby cheese
Parmesan cheese


And what about a dressing? I have a well stocked pantry in terms of mustards, vinegars and sauces. For creaminess I have a little bit of mayo and some Greek yogurt.

Anyone see anything edible there?

For dressing mix whole grain mustard with mayo, I'm with pasta and pumpkin, peas, corn with julienn carrot mixed with mustard mayo dressing.

My pasta salad is usually pineapple, peas, diced capsicum with mustard mayo dressing

Just raw julienne carrot?

I know it's a pretty abysmal selection! Dressing sounds good, although I might have to do part mayo part yogurt as there's hardly any mayo left. Our fridge is full of ham (which DH can add if he wants), Christmas is at the in laws, and we're heading away on Boxing Day so no point shopping now.

Add pine nuts to the list of ingredients on hand!

I just wish I had some rocket or baby spinach leaves.

Yep just raw carrot in thin slices. I only use 1-2 table spoons of mayo to 1 tea/tablespoon mustard. Yoghurt & mayo may work in combination but try a test first.

Pinenuts
Balsamic vinegar

You could always caramelise some onion to go in as well.

That sounds good too.

I just asked DH if he wanted creamy or non creamy dressing and he has elected creamy. I could still add pine nuts to a mustard/mayo dressing?
