ARGH!!! I was making peanut brittle to go with the present for my father, and had to halve the recipe because I didn't have enough peanuts. It was only once I mixed the butter into the syrup and then mixed all the peanuts in that I realised I hadn't halved the butter ddoh.gif

It is very buttery, and I've left it to cool, but it's not going to go like peanut brittle is it? sad.gif What do you think will happen, and is there any way of salvaging it? Should I make more sugar syrup and try to mix the whole lot into that?

If it remains a fail smash it up and mix it in with some vanilla icecream. Definitely NOT a fail then.

I think that will be the ticket, lol. Doesn't solve the problem of what to give my father, but a wonderful friend managed to track down some Darrell Lea peanut brittle so I guess I'm all set.
