I make pavlova every year for xmas lunch - it always turns out great.

Made it last night, left overnight in the oven. Get it out this morning and it's still soft - all over! I don't think it has even cooked through?? This is the first time i've made it in our new oven and the oven does seem a bit cooler than my previous...

Can I salvage?? Wondering if I can put it back in the oven for another half an hour...??

Does 7-Eleven sell Pavlovas?? What else can I make in the 3 hours I've got until we leave for lunch... eeeeekkk???

I would re-bake.

Not sure where you are but I am guessing it is a combination of undercooking and humidity.

(i just had a small slice of leftover pav for breakfast! Yum!)

There are some convenience stores open around here, including a non-chain one. There's a good chance they'd have Mini pavs or similar.

I would def try cooling it further at a slightly higher temp. Nothing lost in trying that. If it's not pretty at the end but till tastes ok (good texture) turn it into Eton Mess.

Do u have left over egg yolks? What else do u have on hand? I normally pair pav with custard or creme brûlée to use up the yolks.
