Potato is hard to freeze - but when it is made into gnocchi it freezes well.
Also freezes well in shepherds or cottage pies. And I have freezed it as potato croquettes, just had to re fry to crisp them up again. To make recipes to eat now - potato bake is delicious or for summer do potato salad |

I would be doing stuffed jacket potatoes, chips/wedges, hash browns, potato salads and potato bake like PP. My kids really love steamed potato right now.. not exciting but I cook anything if they eat it!
I freeze mashed potato all the time & never have a problem re heating. Usually enough for a side of a meal, but a larger amount would be good for pies too. |

cook and freeze as mash.
Or cut into cubes, par-cook, then freeze for use in stews. Give some away to neighbours? |

Store them in a dry, cool, dark place.
Use as required. I buy 10kg bags of potatoes all the time and there are only two of us. |

I think you'll have no problem using them up. My grandma buys 10kg bags and she's on her own. She stores hers in the garage which is a cool dry place at her house.
She also stores hers in either hessian bags or a wire basket, never in plastic. This post has been edited by credence: 01/01/2013, 08:30 AM |
