|
I want to make some sort of mango cream sponge type cake for a dessert, but I'm not sure how to go about it.
I have mango puree and cream, plus all the standard cake ingredients. I was thinking of some sort of layered sponge cake (need a reliable recipe recommendation) with mango cream or mango mousse or something in the middle, then maybe covered in whipped cream? I don't know.. any ideas welcome. |

I did this last year when I had some mangoes about to turn. I pureed I think 2 mangoes and whipped some cream with a bit of icing sugar to stiffen (unfortunately I did all this by look/feel so can't give exact figures). Fold mango puree into the cream, layer in between sponge. I use Nigella Lawson's Victoria Sponge recipe, never had a failure yet.

I am a big fan of Phillip Johnson's mango torte. I'm not home so can't post the recipe.
It is a three layer sponge with mango slices, a mango sauce and marscapone cream filling. It finishes with a praline topping. It's delicious and one of DH's favourite cakes. |
