I just made an extremely quick chicken meal, it came from off the top of my head and made with whatever we had leftover in the fridge but it was delicious and refreshing!
I marinated chicken thigh fillets (however many you want/need or can use a different cut of chicken) in lemon juice, garlic, a bit of olive oil, lemon thyme (only because we have it growing it our garden), salt and pepper.
Then I just grilled the chicken after it had marinated for a while, and made a green salad. Salad consisted of lettuce leaves, cherry tomatoes, spring onion, snow peas, grated Parmesan, and whatever dressing I had in the fridge!
I served the lemon thyme chicken on top of the salad
After the chicken had been marinated for a couple of hours, the whole process took me about 10-15 minutes!
