SIL is staying with us for 2 weeks and only eats chicken and fish. We'll be having a few BBQs so that's a few days sorted, but I need some easy ideas for the other days. Our kitchen gets really hot when the oven is on so I'd prefer not to use it.
Fish I can manage - panfried with veges and salads. Chicken I need a bit of help with. Maybe a curry, a stirfry and fajitas? A roast chook from the supermarket is another meal. Any other quick and easy ideas please? TIA |

A noodle stir fry?
Packaged hokkien noodles Chicken thigh fillets Garlic Ginger Spring onions Veges (carrots, chinese greens, beans etc) Kecap Manis sauce (Malaysian soy sauce) Plum sauce Fish sauce Cornflour Slice the chicken and toss in the cornflour, fry in a splash of hot oil in small batches and remove from pan. Add garlic, ginger and slices spring onions to hot oil and quickly stir fry. Add veges, and stir until they are nice and bright, then add chicken back to the pan and combine well with the veges. Add the sauces to taste......start with 2 tablespoons each of the kecap manis and plum sauce, and a small splash of fish sauce, then adjust to taste. You can also add a squeeze of lemon juice to cut through the sweetness. Prepare the noodles according to the packet then add to the chicken and veges and combine well so that everything is coated in the sauce and piping hot through. http://weekofmenus.blogspot.com.au/2010/08...cken-can-i.html I marinate chicken thighs for 3 hours and then cook in a frypan, serve with rice and broccolini or just a salad. I don't add the oyster sauce at the cooking stage nor do I cook it any oil. Its DS' favourite dish. |

I love Honey Soy Chicken. We don't add other things to ours. Just marinate in honey and soy in fridge for a while. We usually do wings or drumsticks in the oven but you could do it like a stirfry with diced chicken. Or as kebabs or something.
Curries are good and usually a favourite here but we don't like it on hot days. Umm, what about a chicken salad of some kind? Like a caesar or something else. Crispy chicken taco's are nice too. |

Honey lemon chicken is good too.
Chicken thigh fillets 1/4 cup kecap manis 1/4 cuo honey 1/4 cuo lemon juice 1 whole lemon, skin on. Cut the fillets in half and fry each side. Place in ovenproof dish. Combine the honey, juice and sauce and pour over the chicken, turning the chicken over and over so it's all coated. Slice the whole lemon into thin slices and lay over the fillets. Bake at 180 degrees until fillets are cooked through and lemon slices have caramelised. Pour off the liquids into a saucepan and boil over high heat until reduced and thickened. Serve with white rice, steamed greens and the sauce served over everything. Very easy and truly delicious! |

I just made an extremely quick chicken meal, it came from off the top of my head and made with whatever we had leftover in the fridge but it was delicious and refreshing!
I marinated chicken thigh fillets (however many you want/need or can use a different cut of chicken) in lemon juice, garlic, a bit of olive oil, lemon thyme (only because we have it growing it our garden), salt and pepper. Then I just grilled the chicken after it had marinated for a while, and made a green salad. Salad consisted of lettuce leaves, cherry tomatoes, spring onion, snow peas, grated Parmesan, and whatever dressing I had in the fridge! I served the lemon thyme chicken on top of the salad After the chicken had been marinated for a couple of hours, the whole process took me about 10-15 minutes! |
