DH and I have a hot date tomorrow night at the Moonlight Cinemas. I'm trying to think of easy things I can make or prepare tonight to go in our picnic basket as I won't have a lot of time after work tomorrow to get sorted.
I had planned on making a nice potato salad, maybe a pasta salad, some cold cuts, olives, fresh fruit and bread, plus a bottle of champagne, but it's all a bit boring really. I was also considering making meatballs or cutting up a bbq chicken. Obviously we don't need a ridiculous amount of food but I'd really like to make or bring something really tasty. Any suggestions would be greatly appreciated! |

I remember a friend turning up to the outdoor movies with the best picnic parmigiana, which went something like this:
Slice eggplant, dip into polenta, drizzle with olive oil and bake until golden (or panfry them). Put a dollop of pasta sauce and some cheese on top of each round and put back in the oven until the cheese melts. Serve them warm or at room temp with crusty bread - delicious! |

Thanks for the suggestions - that eggplant parmi sounds divine. Mini quiches...why didn't I think of that?

DH's lovely aunt bought us tickets to the Wind in the Willows one year at the gardens and she also gave us a picnic which had:
Smoked salmon Sliced ham Beautiful bread rolls Finely sliced red onion Persian feta Lettuce leaves We assembled our own sandwiches which were so good and had Rocky road for dessert! Hope you have a great night! |
