Hi, have been using my ice team maker a bit in the last week, so far have made choc gelato, lemon sorbet and coffee ice cream, how long would they last ( if they don't get eaten first), dh loves sorbet and would like me to stock pile the freezer!

I'm also interested in this. It never lasts more than a few days in our house due to getting eaten!

What containers do you use to freeze yours in?

I personally find we have to eat it straight away. Ours goes too fhard if I put it in the freezer and then doesn't taste the same.

My favourite recipe involves condensed milk and I find that it starts to settle into a sweeter layer on the bottom after about a week. It's pretty rare for it not to be eaten in that timeframe.
I think most other icecreams are better when fresh - the consistency often starts to alter a bit - lots of them get quite crystallised, and sometimes the surfaces starts to dehydrate (like the skin forming on a custard) - but I read somewhere that putting a sheet of baking paper over the top should prevent this.

If you're making sorbet (no dairy), your ice cream should last quite a while - equivalent to frozen fruit, providing you have a good freezer. If you are making ice cream with dairy, they won't last as long. Commercial ice-creams have preservatives in them which means they last a long time. That said, my experience is if you stock-pile, the family just ends up eating more, so no real benefit!! biggrin.gif

I make a custard based one and it was fine. It lasted a month before it was all eaten. At -18deg, it's consistency, because it won't go bad.
