It is chilly and raining here today, so I am thinking about making a big batch of beef casserole to last a couple of nights.
So hit me with ideas please. |

This is what I do: lol or a variation of it. this recipe was written years ago when I first put it together and reading it over I'm pretty sure its what I still do.
The kids call it meat pie, but its not really. I just bake up a sheet of puff pastry cut into four and place that ontop of the scoop of casserole. Ingredients:- • Meat – steak; chuck; lamb; approx 500g – 1kg cubed • Veges – pots, s/pots peas, corn etc etc. - chopped • 1 medium Onion - finely chopped • Garlic salt, (or can use clove garlic). • Pepper to taste • Good splash Worcestershire sauce • 2 beef stock cubes • 2 tbspn gravox • 1cup water • Puff pastry I have also added in a bouquet garni. Add chopped beef and other ingredients into slow cooker - sometimes I cook off the onion before adding to the dish. Cover, cook 4-6 hr¸ let cool (ish), I believe if you dont have Worcestershire sauce you can use a big dollop of vegemite. |

I'm terrible with recipes. My casseroles and one-pot dishes are all my own concoctions unfortunately.
For a good beef casserole, I tend to use chuck steak. This cut lends itself really well to slow cooked on-pot recipes. I brown off an onion, crushed garlic, add the cubed beef, stir until until sealed. Add your choice of cubed vegetables - carrot rings, button mushrooms, cubed sweet potato. Keep stiring for 5 minutes or so. Add a good dessert spoon of tomato paste, a tin of crushed tomatoes and a cup or two of beef stock (this depends on your quantities). You can also add finely chopped flat leaf parsley, basil, thyme or rosemary. Whatever you prefer or have on hand. Finally, a good grinding of salt & pepper. Let it simmer for up to a couple of hours. I've deliberately left out potatoes, I prefer to serve with mashed potatoes and fresh beans. Or, serve with Parmesan dumplings. |
