Cold soups like gazpacho or a cucumber, avocado yoghurt soup
Salads - I like them with a bit of fruit in them (watermelon, feta & mint; with mango pieces or grilled peaches), some cheese (feta, haloumi). Sunflower seats or pinenuts sprinkled on top are also nice.. BBQ fish, prawns, meat to go with the salads |

I'd suggest a nice fresh salad and BBQ meat - how about chicken breast tossed in oil, all spice, oregano and a little lemon rind with tzatziki and a rocket, pear and Parmesan salad?

We had those porcupine meat balls done in the slow cooker tonight, had them in wraps with salad. Easy and everyone liked it

Here's my new favourite - it is a warm cooked meal but the rice cooker does all the work.
http://www.bestrecipes.com.au/recipe/haina...press-L756.html I use chicken thighs cut into two or three instead of Marylands and garlic and ginger from a jar (the horror!). Last time I added a diced carrot for a bit more veggie goodness and served it with broccoli steamed in the microwave. |
