I have a lovely looking eggplant in the vegie crisper - what can I do with it EB?
The meat I have in my freezer at the moment is:
- a whole organic chicken
- 2 x rib eye beef (on the bone)
- Organic/macro hamburger/rissoles things
- Snags (locally made, not the lips & a.r.s.e from the supermarkets)
- Minced beef
- Porterhouse steak
- Corned beef
I have heaps of other fresh vegetables - beans, carrots, potatoes, broccoli, beans, yellow zucchini's, green capsicum, onions, fresh garlic, cucumbers, tomatoes, lettuce and fresh herbs (thyme, sage and rosemary).
I have an abundance of the usual spices in the pantry, just about everything you can think of. I have tinned tomatoes, tomato paste, feta cheese, tasty cheese, capers and heaps of sauces like red wine vinegar, Worcestershire, balsamic, truffle oil, olive oil, sesame oil.
Now I do online shopping, my intention is to never step foot in the supermarket unless it's for an emergency - like female things for my girls, panadol or wine
(So, I don't want to have to buy anything that I don't already have in my pantry/fridge/freezer).
Suggest a wonderful dish with the central ingredient being my cute looking eggplant.
