Hi, can anyone share a really easy choc chip muffin recipe with me (no bananas)? Plus where an ingredient is listed as 3/4 cup sugar - is that white sugar or castor sugar?

I use this one as you can add any flavours.

220g SR Flour sifted
1/2 cup caster sugar
1 egg lightly beaten
1/2 cup vegetable oil
1 tsp vanilla
3/4 cup milk or buttermilk
150g added flavours eg choc chips, berries etc

Mix dry ingredients together and make a well.
Mix wet ingredients together and pour into well.
Add flavorings and mix until just combined.

Bake at 180 for 15 -20 mins
(Or if making mini muffins about 10 - 12 mins)

Just bumping this recipe up to let everyone know it's the BEST muffin recipe I've ever tried.

I personally think muffin recipes should include vegetable oil + buttermilk to get the best result.

The ingredients gave me 12 muffins, I think I could pile in more mixture next time to get bigger muffins (maybe 9 - 10).

I included 150 grams of roughly chopped dark and white chocolate buttons.

They are sensational. I highly recommend making this recipe a basis for all your sweet muffins.
