Hi.
I have recently broken my ankle & have had surgery & am not allowed to put any weight on it & am on crutches. DH works FIFO & will be away for 2 weeks from next Wednesday. I obviously cannot cook since cannot be on my feet for any length of time & was wondering what options I have. The easiest would be ready meals as just stick in oven/microwave but which ones are good? I love food & hate eating something that tastes bland n boring. Please help + won't even be able to go shopping as can't wheel a trolley and manage crutches grrrr even though I probably will be able to drive as its my left ankle. So bothersome. No idea how I'm going to do so many things!! |

Ready meals aren't ever going to be cheap. Can you get your dh to make up some batches of things for the freezer?
Otherwise, the fresh Coles curries are pretty good. Tasty bite makes some good veggie curries in the Asian food aisle. You can make a quick pasta sauce with a halved onion, tin tomatoes and a knob butter. Simmer for 40mins but requires no other attention. |

I just feed four kids with scrambled eggs with vintage cheese and toast. They loved it.
Bag of salad leaves, hot smoked trout (from Coles), cucumber and tomatoes. Baked frozen fish and salad. Shove a chicken in the oven. Serve with steamed beans. And roast potatoes. All easy. This post has been edited by knittingkitten: 28/01/2013, 08:23 PM |

Oh no OP
Do you have access to home delivery grocery shopping? I wouldn't even attempt to shop in your condition! As for dinners, pre-prepared quiche, pizza, lasagnes and curries are probably the somewhat cheaper option for quick meals. Try to get your DH to cook up meals before he goes. Lots of soups, spag bol, shepherd's pie, curries and lasagne freeze well and cook without too much fuss. Where do you live? Are there any EB members close by or friends or family that can help you out? If I live close to you I could make some meals for you. Take care. |

I'm in the western suburbs of Brisbane. I had thought I'd get hubby to cook a few things and freeze them for me. MIL could have helped but she's away on hols. I guess I could get groceries delivered.
Think will be doing alot of 1 pot curries & rice & pasta bake things!! I can stand for a bit but its agonising after a while. I'm sure I can manage :-) bit of a challenge!! |

Could you do some food prep sitting at a table? Then you could chop up vegies etc and just put some meals together without having to stand too much? I'm imagining spag bol, curries, quiches, stews, soups - foods that you don't need to stand and stir or watch too much. Hope your ankle heals soon.

Oh I'm about 1500km away from you, probably a bit too far away to send you dinners lol! Lite n Easy is a good suggestion if you can afford it. Then you don't have to shop for much, just have UHT milk and frozen bread, you're good to go.
Do you have microwave large soup cups (I have the Decor ones)? I do up a big batch of soup and then freeze multiple cups so I have them handy for lunches. Or cup a soup packets are quick and easy. I have a yummy easy red lentil and brown rice soup recipe if you want. That does me for a month :-) |

Yep suppose I can do prep sitting down. Just so hard having a broken ankle. Brings to light those everyday things that become so hard when you can't walk and have no free hands while trying to move around. Someone needs to invent some carrying tray or something for crutches!!!
