Hi,
I have made a slice in the past that had grated zucchini, carrots and corn but I can't find my recipe. Would anyone have one they use? |

2 med zucchini or equivalent amount grated carrot, corn etc. , 1 small onion fried (can also fry couple rashes finely chopped bacon), 1 cup grated cheese, 1 cup SR flour, 1/4 cup vegetable oil, 5 eggs, mix together and bake at 180 C for 35-45 mins easy!

I use the zucchini slice recipe from taste.com.au - I've added carrot and corn in the past and it worked well. It's the top rating recipe at taste so easy to find - just search taste for zucchini slice.

Just made some yesterday, my 1year old is loving it. You can leave out the bacon, switch around the veg etc
ZUCCHINI SLICE Preheat oven to 180c 6 Eggs Lightly Beaten 2 Med. Zucchinis – Grated 2 Med. Carrots – Grated 1 Large Onion finely chopped 1 Cup Grated Cheddar Cheese 3 Bacon Rashers – Diced 1 Cup Self Raising Flour ½ Cup Oil Salt & Pepper to Taste Method: Mix all ingredients together. Pour into well-greased, lined tin or oven proof glass dish. Spread evenly; bake 30 to 40 minutes until brown. Note: •Depending on the size of the carrots and zucchinis you may need to add an extra 1 to 2 eggs.•If you want to reduce the amount of oil. Reduce it to approx.¼ cup (I have used both olive and vegetable oil) |

Yeah I pretty much do the same as Isobell, I add whatever veg I have handy that will grate Ok. Capsicum and pumpkin work pretty well with the zucchini too.

Yep, my recipe (from my mum's old commonsense cookbook) is pretty similar. 400g grated zucchini, 1/2 cup grated cheese, 1 onion, some diced bacon, 1 cup self-raising flour, 1/2 cup melted butter, bake for 40 minutes at 180 degrees.
At times I've added a couple of other things (capsicum, carrot etc) but I wouldn't replace the zucchini (not all of it, anyway) as it provides a lot of moisture. Also, to enhance the flavour a little, I saute the onion and bacon before adding to the mixture. I also add a few cloves of grated/crushed garlic, and a handful of grated parmesan cheese. I've also put some tomato slices on top before baking to make it look a little more fancy. We love this meal in our house.... quick and easy to make and tastes yummy. |
