Aaarrgghh I'm so frustrated! I've tried a few different oat/muesli bar slice recipes now & without fail they all crumble when I cut them into bars/squares. I've made sure I let them cool properly first and I'm getting really frustrated now. Does anyone have any tips or a guaranteed crumble proof recipe? I'm after something it for school lunch box so nut free & as healthy as possible - minimum sugar, not bothered about fat content. Any advice is very much appreciated

I've made some martha stewart oatmeal, raisin and choc chip cookies which might work. They'd probably work and they taste awesome. My kids hate oatmeal but scoff these down happily every time. Do you want the recipe or are you only after muesli slices.

The recipes Ive seen suggest cutting the slice warm and letting it cool before taking it out of the pan. Would this help?

Thanks CO but I'm trying to cut out choc chips & the like & will all the failures I'm wary of adapting these recipes now lol! They do sound good though.
TGS I'll try that thanks, the others have said to allow to cool but it's just not working. At this stage we're going to be having a shed load of crumbled slice on fruit & yogurt |

This recipe is very yummy and I've never had any problems with crumbling. You could leave out the peanuts to make it nut free. However, the 'glue' is condensed milk so no exactly sugar free (in fact, no where near sugar free!). |

What about oatmeal cookies rather than slice - like these from Teresa Cutter (the Healthy Chef - I LOOOOVE her recipes):

The Carrot and Oat Slice recipe on Essential Kids is not crumbly and it's really delicious.
I think why you're not having success is if you reduce the amount of sugar in a recipe, it affects the way the cake/slice holds together. I don't know how you'd go substituting sugar for something like stevia? I haven't really done much experimenting with that myself, some others out there might be able to give advice about cutting down sugar in cake recipes. |
