I'll be stalking this thread too.

I generally just throw in whatever's in the pantry: soy, worcestershire sauce, garlic, seeded mustard, honey, lemon, oil and herbs in any combination/quantity ph34r.gif

Warning - occasional attempts at humour - not always successful
My go to standard is a bit of honey, a bit of minced garlic, a bit of soy sauce - ziplock bag with the meat and move on with my life.

My war paint is Sharpie ink
Ginger (minced), sesame oil, honey and coriander.

Ginger, soy and orange juice is amazing on scallops.

soya sauce, worchestire sauce (and oyster sauce if I have it), tomato sauce/paste, honey, ginger, garlic, sambal olek or chilli, lemongrass and whatever herbs I can grab from the garden, chicken stock or beef stock (depends on the meat). Plus some water so it is not too salty and strong with the sauces.
Throw a bit of everything in but LOTS of garlic, ginger and fresh herbs.
I make a living out of marinading meats and I do pretty well out of it!
Forgot to add a tablespoon of vegetable oil!

i never measure and can't remember quantities but this is great for pork ribs and chicken wings. cook it longer than you think and it will be lovely and sticky; approx 1cup plum jam, minced garlic, 1/2 cup tomato sauce, 1/4 cup worcestershire sauce, 1/2 cup brown sugar, 1/4 cup malt vinegar.

Mine is wine (white for chicken and pork; red for lamb and beef), onion, garlic, salt and ground pepper.
